My menu is built around hard-to-source ingredients. I needed a distributor who could find what I asked for, not pick from a list and call it close enough.

HF's buyers actually know the products. When I ask for a specific noodle from a specific producer, the answer is usually 'we already carry it' or 'give us a week and we will.' That's not how it usually works at a national distributor.

Six years in, my standing order list lives in their app. I reorder twice a week from the walk-in. I almost never call the desk. When I do, the rep who picks up has been on my account since year two.
